An excellent flavor to this sauce with a bit of sweetness. I feel like the heat rating is higher than it should be though. I think Spitfire (my favorite) and certainly Jolly Roger has more heat than this sauce. If Spitfire is an 8/10, I'd give this a 6 or 7. I found that I kept adding more to get the heat that I wanted, but the flavor is excellent.

I am an extreme hot sauce pervayor. I went out on a limb and purchased VAT54 and I'm extremely impressed. I can actually say "it's my favorite sauce I've ever had". No joke it's simply amazing. I was a huge fan of the Jolly Roger sauce from the 2000's and was very disapointed when the recipe was changed for reasons out of their control. I am extremely pleased that Vat 54 is a wonderful replacement and the closest match to the original. Very well balanced, bursting with flavor and the perfect amount of heat. It has become my go-to hot sauce for hotdogs, burritos and beef or pork ribs. I still miss the original Jolly Roger but Vat 54 has certainly filled the void.

THE best hand crafted hot sauce I've tasted since the original Jolly Roger from the 90's. The perfect balance of hot and sweet with distinguishable notes of Maine seaweed and sea salt. I absolutely love this hot sauce. I truly miss the original Jolly Roger but Vat 54 is the next best thing. I will buy it again and again.
